Can I add baking soda to prevent the sugar that I use in my honey cornflakes to rock harden?
First I combine brown sugar with honey and butter and heat until disssolve. Then I fold in the cornflakes before putting in paper cups and baking them in an oven.
Maybe try to add sweetened condensed milk or evaporated milk into the recipe. Not sure about the baking soda.
What temperature are you baking this at?
Another thing is, if you are actually heating the honey with the brown sugar and butter til it dissolves, you might be heating it too long. It shouldn't take that long for the brown sugar to dissolve on warm.
When you heat honey and sugar together, it can create a hard glass candy, so heating it til it dissolves and then also cooking it in the oven is probably getting the temperature of the sugar mixture to a hard glass stage and is making it rock hard. (might be good for lollipops though!)
Without knowing temps and amounts of ingredients (cups, tablespoons, etc) it's difficult to really help too much.
**** Suggestion: Try melting the butter first in the microwave or on stove top. Turn stove top to OFF. Then add the honey and brown sugar to the melted butter while it's still warm and just keep stirring until the sugar is dissolved.
THEN, mix the cornflakes and put in the oven. I would add another minimal amount of liquid to this though (like evaporated milk) to make sure it doesn't get rock hard.
Are you trying to make it like rice krispy treats where they are still chewy or are you trying to make it more like brittle? Brittle would not be rock hard, but crisp.
Seems like I would butter a cookie sheet and then spread the mixture out on it and depending on what texture you are looking for, either cut or break after it comes out of the oven.
Again, without the actual recipe of temperature, amounts of ingredients, and length of time in oven, this is the best I could come up with. Hope I've helped some or given a few ideas that might work out for you.
